What is CORSICA LOAF™ and what does it taste like?
CORSICA LOAF™ is a truly scrumptious combination of French and Italian baking styles. Essentially, we simply form and bake our traditional French bread dough at a very high temperature, bathed in our own patented blend of olive oils - and crowned with an abundance of sesame seeds.  

During the bake however, the roasting oils form a delicious crust on the bottom of the bread, which plays a huge roll in making The CORSICA LOAF™ is truly unique.  As a result, the bread has a moist inner sponge, with wonderful burst of flavor like non other!

What kind of olive oil do you use? 
This is our nationally trademarked blend, so it’s proprietary information. However, we can honestly say that it is exclusively produced with only 100% olive oil, and sesame seed.

What size is a loaf of the CORSICA LOAF™?
A full loaf of CORSICA™ is roughly 6 1/2 pounds, and is formed in the shape of an oval, not unlike the French island of Corsica!  However, we sell the bread in quarter loaves, and half loaves, as well as full loaves. Because this bread is only made by The Door County Bakeryllc, and because it freezes so well, folks often purchase an entire LOAF™ and then section it for their freezer. We always advise people to reheat the bread before enjoying!

Is your bread gluten free?
Technically, No, CORSICA LOAF™ is not “gluten free”. Yet, many customers with gluten issues have remarked to us that in fact they can enjoy our bread! The fact is, that given at least a 20 to 24-hour fermentation-time for the bread dough to develop more robust flavor, this fermentation also allows for the gluten fibers to break down considerably. In fact, it is said that celiacs is less common throughout Europe.

Does the CORSICA LOAF™ freeze well?
Absolutely!  Partly, this is because of the protective crust that forms with the bread being baked surrounded in our patented oils at such a high temperature! With each purchase, we also provide simple instructions on freezing and reheating the CORSICA LOAF™.  
 
What are The CORSICA STIX™?
The CORSICA STIX™ are a direct derivative of The CORSICA LOAF™! With the exact same recipe involved, we flatten (or “docker down”) the loaf just before it goes into the French-oven baking process.  Then, upon cooling, we slice the bread up into individual little 1inch chips, and bake them again!   

As a result, we have now created just a wonderful snack that can either be enjoyed by itself straight out of the bag, or they can be served in conjunction with cheese, pate, or any number of creative combinations.  

The second baking process removes virtually all of the water from the bread, Hence, The CORSICA STIX™ are delightfully crunchy, have all the wonderful flavors of The CORSICA LOAF™, and they have a really long pantry life as well.  (…That is, if they’re able to avoid being eaten!)

What makes the STIX™ different?
Besides how they differ from The CORSICA LOAF™, CORSICA STIX™ differ from a world of other tasty snacks by virtue of being Vegan, and truly “au natural." There are no sugars, chemicals, dairy, or fats other than olive oils involved in their production.  And, they are low in sodium content as well. CORSICA STIX™ are healthy!

What is the pantry life of The CORSICA STIX™?
Twelve months.

Now that your bakery is not open for retail anymore, what did you do with all that space?
Thank you for asking that! As The Door County Bakeryllc has now basically shifted from a retail business model to wholesale, we’ve needed to dedicate most of that beloved playground into production, packaging, and marketing space for The CORSICA STIX™.  We are currently producing nearly 1,000 bags per week, displayed in nearly 85 stores, mainly throughout Wisconsin and Illinois for now, and are  ever-expanding our exposure of the well-known Door County Bakeryllc CORSICA™ Brand.
